Abstract

Carrots are a source of pigment. Carotene gives an orange color to carrots and various fruits and vegetables. In extracting dyes a method is needed that is in accordance with the nature of the material (source of pigment), to produce high pigment yield and stability. The research was conducted with the aim to see how the intensity of the color produced by filtering carrot extract filtered with whatman paper and measuring the intensity of color with a spectrophotometer at a wavelength of 453 and wanted to prove that the carrot contained pigment. And the results of this study indicate that the color intensity produced by carrots is orange. this orange color shows that carrot pigment is rubberenoid and extraction of carrot coloring with ethanol solvent shows that carrots have been shown to have pigments
